The highlight of every festive meal in France, foie gras requires the greatest care to attain its best quality and taste.
Take part in a day session in a friendly atmosphere and learn everything about foie gras: its history, how to choose it, prepare it and taste it, the best recipes…
You cook and taste a gastronomical lunch including foie gras.
Option 1: cooking class + gourmet lunch
Option 2: cooking class + gourmet lunch + 2 jars – a total of 0,8 pound - of plain duck foie gras prepared by yourself
 


Born in a famous family of foie gras producers, Martine transmits her savoir-faire and passion for the cuisine of the South-West of France with much enthusiasm. The product used is exclusively duck foie gras from French origin. The class is taught in a typical Parisian bistrot entirely reserved for us.
 
Programme of the day, from 10:30 am to 4:30 pm:
 
10:30 am – 11:45 am: welcome coffee and preparation of jar and terrine foie gras
Welcome coffee
Preparation of raw foie gras: nerve removing, seasoning, marinade
How to recognize the quality and how to buy foie gras
Filling up and cooking of jars

11:45 am - 1 pm: lunch preparation
Preparation of the salad and the cheeses
Foie gras yesterday and today
How to taste foie gras: bread (baguette, spice bread, fig bread,…), wine (Porto, Champagne, red Bordeaux, Sauternes,…)
Preparation of pan-fried foie gras

1 pm - 3:30 pm: lunch tasting
Menu “the perfumes of South-West of France”
